our story

Our journey began over 20 years ago in Southern
Portugal, a country that is blessed with a wildly rich
culinary heritage and landscape, and filled with
foods and flavours that few people outside Portugal
know about. This inspired founders Stephen and
Rachel Firth to create Azouro in 2013. The Portuguese
identify strongly with local and regional foods and
azouro curates the best, most delicious, and most
authentic of these products in pursuit of excellence.
With so many flavours to explore, our journey is
just starting.

our olive varieties

Our olives are indigenous varieties unique to Portugal. The hot dry summers and cold wet winters of this region create optimum conditions for ripening the olives on the trees, helping to create their distinctive flavour. All our olives are preserved naturally in brine (mix of water and salt) for a minimum of 7-8 months and up to 2 years.

Galega olives—350g

Known as the olive of Portugal, our native Galega variety are ripened on the tree and then carefully selected for harvesting when just ripe. They are then cured before adding oregano. The result is an olive that is firm, smooth, and sweet. Produced in the Beira Baixa region, these olives (a local favourite), are an ideal table olive as the pulp is easily separated from the stone. Net drained weight: 210g

Negrinha Do Douro olives—350g

Unique to the Douro region, these olives are harvested
when turning colour. They are then preserved and split
before adding garlic and oregano. The result is an olive
that is firm, robust and garlicky. Net drained weight: 210g

Trás-os-Montes and the Alto Douro is one of the best olive oil production areas in the world, where the Terra Quente (The Warm Land) climate and schist soils produce delicate and complex olive oils with a nutty aroma. These are extremely balanced olive oils with sweet, green, bitter, and spicy tastes. Situated just above the River Douro in the north of the country, the area is famous for Port Wines, and offers the right conditions for us to produce our exclusive and fascinating olive oil.

Our olives are cold pressed within hours of being handpicked, and then bottled in the district where the olives are harvested to maintain the strict Protected Designation of Origin certification criteria and respect cultural traditions.

Every season we create our unique blend from a selection of the finest indigenous olive varieties from this region – Verdeal, Madural & Cobrançosa.

Our fish are rich in Omega-3 and an excellent source of protein. Prepared, canned, and packaged by hand in Matosinhos (fishing port), Northern Portugal, combining traditional Portuguese methods with modern technologies and the highest quality standards. Our fish is skinless, boneless, and ready to eat, from the tin, in salads, on toast, or as tapas.
